1. Avocados are a nutrient-booster, and a cancer fighter-
Add a little to your salsa and you’ve got a super-food! Researchers from Ohio State University found that people absorbed four-and-a-half times more of the cancer-fighter lycopene from tomatoes when avocado was added to salsa. That’s because the healthy fats help you absorb more nutrients. Extracts from avocados also kill or stop the growth of precancerous cells that lead to oral cancer, and studies show that it may have a similar effect in other cancers.
2. Avocados protect your vision- Avocados are rich in lutein and zeazanthin – two antioxidants found in the retina that help keep your eyes healthy. Avocados can also help prevent age-related problems, like cataracts and macular degeneration.
3. Avocados also have healthier fat- Skip the mayo and go for a creamy avocado on your sandwich. It packs four grams of heart-healthy monounsaturated fat, which lowers cholesterol, two grams of fiber and one gram of protein per ounce. That makes it both a lower-fat and more filling substitute than mayonnaise.

I love avocados, either by themselves, or in my home-made version of guacamole.
When I make guacamole, I use 1 avocado, 1 or 2 tomatoes, and a red or yellow or orange bell pepper, sometimes with a few walnut or pecan chips. Delicious!
I have guacamole when I eat my flautas and enchillada.
